We’re on a mission to raise £150,000 by Burns Night to fund the construction of a new maturation warehouse at Castletown Mill — a vital next step in bringing Stannergill Whisky to life.

This project will ensure we can store and age our first casks on-site, create new jobs in Caithness, and continue the transformation of one of Scotland’s most historic mills into a state-of-the-art craft whisky distillery and world-class visitor experience.

Castletown Mill is the ideal home for a new Caithness single malt whisky — one that honours the region’s heritage while shaping its future. Stannergill Whisky will become a legacy brand with lasting value, to be enjoyed by whisky lovers around the world.

Founded by Martin and Claire Murray, owners of Dunnet Bay Distillers — the award-winning creators of Rock Rose Gin and Holy Grass Vodka — this is the next exciting chapter in their mission to build a sustainable future for Scottish craft spirits in the far North of Scotland.

Built in 1818, Castletown Mill has stood for over two centuries as a symbol of Caithness craftsmanship. After decades of dereliction, it’s now being lovingly restored by Martin and Claire Murray and their team to become the new home of Stannergill Whisky — a place where heritage and innovation come together.

This ambitious transformation is already underway, turning crumbling stone into an inspiring hub for whisky making, tourism, and community regeneration.

Castletown Mill will open to the public this November, with distillery tours and experiences launching from Easter 2026.

Stannergill Whisky will be made using barley grown in the fields surrounding Castletown Mill and pure Highland water fed from the nearby Loch of Durran. Matured by the Caithness coast, it will reflect the region’s natural character and light in every glass.
