Our process water will be supplied from an on-site borehole drilled to 99m deep. We use a closed loop cooling system and will recover heat which will be used to keep our visitor spaces warm.

Dunnet Bay Distillers already pioneer innovation in minimising waste/by-products in the form of packaging at its gin, vodka, and rum distillery, and similar environmentally friendly practices will be applied to the creation, bottling, and packaging of Stannergill Whisky. Draff left over from the mashing process will be given to local farms to use as cattle feed, whilst pot ale and spent lees left over from the distillation process will be used as fertiliser in the fields surrounding Castletown Mill.

When Castletown Mill opens to the public, we will encourage visitors to use public transport. We hope to operate an electric minibus to transport visitors between Castletown Mill and our gin, vodka, and rum distillery in Dunnet. Electric charging points will be available to visitors at both sites and bike storage will be available to cyclists.

Biodiversity is important to us so we have put in place measures to preserve and enhance the flora and fauna which live on the Castletown MIll site. We hope to introduce a Kitchen Garden and manage the woodland adjacent to the mill building so local plants and animals flourish.

We hope that over time the Kitchen Garden will supply produce to the restaurant at Castletown Mill. The Bistro menu will showcase the best produce that Caithness has to offer and will reflect the seasonality of local produce.
