A Whisky Reflecting the Caithness Way
Rooted in the vast skies, open landscapes, and serene wilderness of Caithness, Stannergill Whisky is a spirit worth savouring—and visiting. Set within the dram-filled arc of the North Coast 500, Castletown Mill is one of the most picturesque stops on Scotland’s legendary coastal road.
Barley & Distillation
Stannergill Whisky is crafted from Caithness-grown malting barley. Barley harvested from the fields surrounding Castletown Mill will be malted and returned to us for distillation in traditional copper pot stills. The whisky will mature in a mix of American Bourbon casks and European Sherry casks, chosen for balance and depth.
The Influence
of Oak
We will use seasoned oak barrels. Oak breathes, flexes, and layers flavour over time—the better the wood, the better the spirit. Our carefully selected American oak brings soft vanilla, while European oak adds dried fruits, chocolate, and figs.
Patience & Perfection
Cask maturation was discovered by chance, when forgotten whisky revealed a richer spirit. Today, Scotch must rest at least 3 years before bottling. At Stannergill, we will mature longer if needed—whisky will only be released when our Master Distiller, Martin, declares it perfect.
Viking Connection
From the 9th century, Caithness was shaped by Norse settlers, who later blended with Gaelic culture. The region remained Norse in spirit long after joining Scotland in 1196.
Stannergill takes its name from the Stannergill Burn, once powering Castletown Mill. From the Old Norse steinn garðr gil—“stone-enclosed gorge”—it reflects both Viking heritage and Highland water, at the heart of our whisky.
