Our dream of distilling together in Caithness began back in our university days.
Martin studied Chemical & Process Engineering, Claire studied Hospitality & Tourism. Though life took Martin offshore and Claire into tourism, the idea of building something meaningful at home never left us. When family arrived, the decision became simple — create work rooted in the place we love.
That dream first came to life with Dunnet Bay Distillers, the home of Rock Rose Gin and Holy Grass Vodka. What began as a small coastal distillery grew into a brand recognised around the world — and it inspired us to look to the future once again.
Why Castletown Mill?
In November 2020, we bought Castletown Mill — a derelict 19th-century grain mill near Dunnet Bay, just a stone’s throw from the NC500. Built around 1818, with thick Caithness stone walls and slate roofs, it had stood empty for 32 years. We passed it every day. We fell in love. And we resolved to restore it — to bring whisky, heritage, and purpose back to this iconic building.
A Vision for Revival
We’re not just restoring walls. We’re building a legacy. Castletown Mill will be reborn as a craft whisky distillery and historic visitor destination. We want this grand mill to stand strong — for locals, for travellers exploring the NC500, for whisky lovers everywhere — as a symbol of heritage, community, and ambition.
Growing Together
Our goal is to make Stannergill Whisky something of lasting value: whisky that honours Caithness tradition and inspires new whisky-making stories. Together with what we’ve built at Dunnet Bay Distillers, this marks the next chapter in our journey — growing, learning, and creating spirits that celebrate this wild and wonderful part of Scotland.
