The Spirit of Castletown Mill

Born of Barley.
Shaped by Sea Air.
Rooted in Caithness.

We’re a small, independent distillery based in Caithness and the creators of the award-winning Rock Rose Gin, Holy Grass Vodka, and Mapmaker’s Rum.

Restoring Castletown Mill marks the next stage in our journey. For years, we admired the beautiful but derelict mill from afar, dreaming of bringing it back to life. That dream became reality in 2020 when we became its proud custodians. Our mission is to revitalise this iconic Caithness landmark — transforming it into a destination whisky distillery that celebrates heritage, craft, and community.

Craft. Community. Discovery.

Castletown Mill

A Legend

Reborn

Once the beating heart of Castletown, the historic mill stood silent for decades — a weathered shell of local industry, slowly succumbing to time. Built in 1818, it had witnessed generations of graft and growth, but by the early 21st century, it teetered on the edge of dereliction.

“We saw more than ruin – we saw a chance to restore not just a building, but a legacy…”

Martin Murray, Founder
Carefully and respectfully, we brought the mill back from the brink.

Stone by stone, beam by beam, we’ve reimagined it as a working distillery that honours its industrial past while embracing a sustainable future. Its original form remains — the stone walls, the spirit of craft — but now hums with new life: copper stills, warm hospitality, and a vibrant energy flowing within.

Today, Castletown Mill is more than a distillery. It’s a place to explore, to taste, to gather. Join us for guided tours, enjoy a dram in our café, or linger over a meal in the restaurant — all set within the heart of this beautifully restored Highland landmark.
